Cherries, dark chocolate and strawberry jam on toast. Rich, juicy, rustic and scrumptious.
The grapes were grown in the Amadio Vineyard which is located in the northern part of Adelaide Hills near Kersbrook. The grapes were handpicked in March and then transported under cool conditions to the winery.
The grapes were destemmed and fermented in a tall open vat at ambient temperatures. Hand plunges, pump overs using a tall ladder and some acrobatics during ferment and post ferment the wine was left on skins for a week for extra oomph. The wine was pressed, settled for several days and then barrelled down into old French barriques for 14 months to give the wines extra savoury characters. A dash of Monte was added for extra intensity creating a wine that punches well above it's weight and is designed for those looking for some serious fun.
Alcohol: 14.0% alc/vol

Fermented in a tall open vat and matured in a stack of oak.
