Wildflower and fennel lure you into a den of toasted hazelnuts and luscious orchard fruit. Bathe in a rock pool of squeezed grapefruit before sliding gracefully into the fresh night air.
The grapes were sourced from Joe Vaughan’s Mornington Peninsula vineyard. The vines are cane pruned and trellised for maximum sunlight and excess shoots and leaves around the bunches are removed to ensure optimum ripening.
The grapes were harvested by hand in the early morning and were cold soaked on the bunches for two days prior to pressing for increased texture and aromatics. After pressing and settling, the juice was transferred to old oak barriques and naturally fermented without the addition of yeast with some lees stirring for extra creaminess and mid palate weight. The wines were racked and matured in oak barrels for nine months before blending and bottling without fining or filtration.

We are going off the beaten track here into the world of skin contact and low intervention wines. The first clue is this white wine is a little cloudy as it has been bottled with a touch of sediment to add texture and also some earthy tones. And it is also made from Friulano, a grape seldom seen out of its home in Northern Italy. Friulano is often quite an expressive grape variety which the skin contact has muted in this example, as you would expect.
For the style I like it. There are beautifully delicate fruits; peach skin, floral and earth with some subtle oak. This all leads to a tangy and larger angular palate with some attractive textural richness. It is super savoury, still overlaid with those pretty floral fruits and then finishes long with a saline tang. A good primer into the world of more natural wines.
